The humble drip machine gets a bad reputation it doesn't deserve. The truth is most disappointing drip coffee has nothing to do with the machine. It's stale grocery store beans, too small a dose, and a carafe that hasn't been deep-cleaned since last year. Fix those three things and your morning pot transforms.
1. Start With Fresh, Specialty Grade Beans
Coffee is produce. It peaks in the weeks after roasting, not the months. Grocery store bags often sit in warehouses and on shelves long past their best. 2. Use Enough Coffee
The Specialty Coffee Association's golden ratio is roughly 55 grams of coffee per liter of water, which works out to about 2 level tablespoons per 6 oz cup marked on your carafe. 3. Grind Fresh, Grind Medium
Pre-ground coffee goes stale within days of opening. A $20 burr or blade grinder and 10 seconds each morning keeps the flavor locked in the bean until you need it. Aim for a medium grind, like coarse sand. More in whole bean vs ground.
4. Mind Your Water
Coffee is 98% water. If your tap water tastes like chlorine, your coffee will too. Filtered water is plenty. Your machine should brew between 195 and 205°F; most decent machines do, but if yours takes forever and brews lukewarm, that's the upgrade to consider.
5. Clean the Machine
Old coffee oils go rancid inside the brew basket and carafe and quietly ruin every pot. Once a month, run a brew cycle with one part white vinegar to two parts water, then two cycles of clean water. You will taste the difference immediately.
6. Drink It Fresh
Coffee on a hot plate starts cooking. After 20 minutes it tastes burnt no matter how well you brewed. Pour into a thermal carafe or insulated mug and it stays sweet for hours.
